Those who know me in my daily life know that’s how I’ve been mostly eating for better than a decade now.

When you have literally no more than one unspoken-for minute, maybe you can share with me what brands of unprocessed whole or cut-up chicken you purchase. Perhaps one or more brands will be available in the Portland area. If you have some seconds left in that one minute window, what is your preferred method for cooing the bird?

Dear Reader,
1.) Trader Joe’s pasture raised whole chicken with the green label. Very affordable. I think $2.99 / lbs.
It’s not perfect but it’s a good bridge between conventional raised chicken and going and finding a chicken farmer or two that you can develop an ongoing relationship with and who raises quality birds that are processed on the farm.
2.) Very old and NOT well known Slovak recipe (not even well know among Slovaks) — so simple, so delicious, step 1. take a pound of salt, dump it on the baking pan/roasting container (forgive improper vocab), step 2. put the whole chicken on it, step 3. roast 375 until done (about 1.5 hours), super crispy thin skin, super juicy meat. No fuss required. No seasoning required.
Step 3. Eat. Step 4. Make stock from the bones. Step 5. Drink stock or make soup.
Yes. It “wastes” a pound of salt. But it’s really good and worth the waste.

I’m fortunate to live on the border of Indiana and have plenty of farms and ranches to get my proteins and veggies from.
Once you start eating real food, you cannot go back to the grocery gruel.
One amazing appliance I have found to make cooking healthy is the Ninja Foodie!
This amazing bad boy, does it all, it bakes, it sauté s, it air fries, it slow cooks, and my favorite it pressure cooks meats to a melt in your mouth succulence to die for.
Even better, forgot to thaw that chicken, no problem. Frozen to plate in about 90 minutes or less.
I got a load of non gmo fresh sweet corn coming from my Amish farmers this week.
With the Ninja, just cut off the ends, add a cup of pure water and pressure cook for 4 minutes and you will have the most tender corn known to man. Eating fresh has never been so easy 😎
The husk and silks slide right off ready to be slathered in some delicious sweet creamy grassfed butter and sea salt. Maybe some freeze dried habaneros for some kick.
They have some newer Ninja models out there, that steam too. Which is great for veggies.
There is a slight learning curve, but if you follow the directions your golden.
So, for all of those out there that are taking up healthy eating, do check out this gem.
I’ve had mine for about 5 years now and now use my stove top as a drying rack, lol 😂.
